Shiitake Green Bean Casserole

This is going to be a culinary adventure into waters previously uncharted by Awkward Haiku; fusion cooking. From scratch, we are going to make the cream of mushroom base with shiitake mushrooms. And that about covers the fusion aspect of our dish. All of the images that you see are from the making of this casserole, let me know if you want to use them elsewhere.

Creem* of Shiitake Soup.
1 pound shiitake mushrooms, cleaned
1 Tbsp lemon juice
2 Tbsp unsalted butter
1 chopped challot
1 Tbsp chopped fresh thyme or 1 teaspoon dried thyme
1/2 bay leaf
3/4 cup semi-sweet table wine 
1 tsp salt
2 cups heavy cream 
1 1/2 cups chicken stock 
1 tsp cornstarch dissolved in 1Tbsp water

2 1/4 cups creem of shiitake shoup
1 tsp soy sauce 
1/8 tsp black pepper
4 cups fresh green beans
1 1/3 cups French fried onions

Take your pound of shiitake mushrooms, de-stem and coarsely chop them. Then sprinkle the lemon over the chopped mushrooms.

Next, melt two tablespoons of butter in a 4 quart sauce pot and saute the shallot
Add the mushrooms, thyme, bay leaf and saute over moderate heat for 10-15 min or until all of the liquid from the mushrooms has been released:

Add salt, pepper, wine, chicken stock and heavy cream, bring to boil then reduce heat to simmer for 20 min. 

While soup is simmering, break off the tips from the green beans and boil in salted water for 15 min.

After the 20 min is up on the soup add your corn starch and stir for 10 min straight with out stopping. 

Strain the beans and put them into a 1 1/3 quart casserole dish. Incorporate your 2 cups of soup and 1 cup of the French fried onions (I haven't figured out how to make these yet so for now just buy them). Put the mixture in an oven preheated to 350 degrees (or more depending on the quality of your oven).

Wait 25 min or until the mixture begins to bubble. I watched the beginning of the Taylor Swift hosted SNL episode on my computer.

Take the casserole out of the oven add more French fried onions on top and put back into the oven for 5 min.  When golden brown, take out of the oven and serve to those worthy of your post ironic casserole.
